I don't know?

Is it just my kids or do all of yours always want to eat "I don't know"? I asked for ideas for dinner this morning before school and I got the standard answer. "I don't know" I wish someone would create a dish full of yummy vegetables and call it "I don't' know". I would make it, wouldn't you? That would teach them.

My husband is the same way. He never has ideas for dinner. I take that back he has one idea and he suggests it often. Meat Loaf.

I want some help. I am sick and tired of making the same stuff for dinner. Please post recipes either in the comments to this post or on your blog. I am going to post a recipe as soon as I decide which one. I will make sure it is a kid friendly recipe.

Please help me fight the dinner time blues.

How funny he suggests Meatloaf. Boyd refuses to eat it-no matter who makes it. I'll come back later with a recipe for ya.

Quinn hates Meatloaf... And I have a REALLY good recipe for one. It has moz. cheese swirled into it. Anyway... I get the same thing for suggestions too. Here's one I've been meaning to try for a while, but never have. I've heard really good things about it.

Chicken Spaghetti
2 cups cooked chicken
2 cans Cream of Mushroom soup
2 cups grated sharp cheddar cheese
1/4 cup finely diced green pepper
1/2 cup finely diced onion
1-4 oz jar diced pimentos, drained
3 cups dry spaghetti, broken into two inch pieces
2 cups reserved chicken broth from pot
1 teaspoon Lawry’s Seasoned Salt
1/8 to 1/4 teaspoon Cayenne pepper
Salt & Pepper to taste
1 additional cup grated sharp cheddar cheese

Cook 1 cut up fryer and pick out the meat to make two cups. Cook spaghetti in same chicken broth until al dente. Do not overcook. When spaghetti is cooked, combine with remaining ingredients except additional 1 cup sharp cheddar. Place mixture in casserole pan and top with remaining sharp cheddar. Cover and freeze up to six months, cover and refrigerate up to two days, or bake immediately: 350 degrees for 45 minutes until bubbly. (If the cheese on top starts to get too cooked, cover with foil.)

I used 2 Foster Farms chicken breasts instead of a cut up fryer and I only added 1 1/2 c. of chicken broth instead of 2 c.

Here's another. We just had this tonight and my kids really liked it!

Tortilla and Black Bean Pie

4 flour tortillas
1 T. canola oil
1 large onion, diced
1 jalapeno chile, minced (remove ribs and seeds for less heat)
2 garlic cloves, minced
1/2 t. ground cumin
coarse salt and fresh ground pepper
2 cans black beans, drained and rinsed
12 ounces beer or 1 1/2 c. water (I used water)
10 oz. frozen corn
4 scallions, thinly sliced
2 1/2 c. shredded Cheddar cheese (I used colby jack)

Preheat the oven to 400 degrees. Trim the tortillas, if necessary, to fit into a 9-inch springform pan. Set aside.

Heat the oil in a skillet over medium heat. Add the onion, jalapeno, garlic and cumin; season with salt and pepper. Cook, stirring occasionally, until the onion is softened, about 5-7 minutes.

Add the beans and beer or water to the skillet, and bring to a boil. Reduce the heat to medium; simmer until the liquid has almost evaporated, about 10 minutes. Stir in the corn and scallions, and remove from heat. Season with salt and pepper.

Fit a tortilla in the bottom of the springform pan; layer with 1/4 of the beans and 1/2 c. cheese. Repeat three times, using 1 c. cheese on the top layer. Bake until hot and the cheese is melted, 20-25 minutes. Unmold the pie; sprinkle with scallions if desired. Slice into wedges, and serve immediately with salsa and sour cream.

Quick, easy, and delicious!

I didn't have black beans, so I used kidney beans and canned corn.

This is a classic comment. :) I love trying new recipes and find that I am running out of steam to think of something new and exciting. Lately we have been eatting something new and yummy... I don't really have the recipe but I will get to you later with it. It is Garlic Breaded Chicken with Spaghetti. Yum!
